  • 1 organic orange
  • 1 organic lemon
  • Walnuts
  • 1 tablespoon dill
  • 3 tablespoons olive oil
  • ½ red onion (optional)
  • Salt and pepper to season

  1. Slice the zucchini very finely.
  2. Grate zest from ½ orange and ½ lemon.
  3. Peel and fillet orange and cut into 1cm pieces (see video instructions).
  4. Roast walnuts and chop coarsely.

  6. Sprinkle orange zest, lemon zest and nuts on top.
  7. Spread orange pieces on top.
  8. Mix olive oil with a few drops of lemon juice and pour over the zucchini carpaccio.
