#süsskartoffel sind leider immernoch zu sehr unterschätzt dabei sind sie nicht nur lecker sondern auch unglaublich vielfältig und können, aufgeund ihrer wundervollen Nährstoffe, dir die ein oder andere Minute deines Lebens zurückgeben.

Rezept:
- 1 Süsskartoffel
- 2 EL Rote Bohnen
- 1 EL Maisköner 🌽
- 1 EL Cashewkerne
- 1/2 Becher Kokosjogurth
- 1 EL Kresse
- 3 EL Olivenöl
- Salz und frischen Pfeffer
- 1 EL Zitrone

• Süsskartoffel 50-60 min bei 180 Grad im Ofen garen.
• Kokosjogurth mit Zitrone und etwas Salz vermengen.
• Bohnen und Mais leicht anbraten (kur bevor die Süsskartoffel fertig ist)
• Süsskartoffel aufbrechen, mit Bohnen und Mais befüllen.
• Kokosjogurth auf den Teller geben, mit der Süsskartoffel toppen.
• Geröstete Cashewnüsse , Olivenöl, Kresse und Salz drübergeben.
