Tip: Ferment fruit at home
Fermenting fruit at home is really much easier than it sounds. With the right ingredients and tools, it takes no more than a day or two. For starters, we recommend using a clean fermentation vessel with an airtight seal to prevent mold growth. Therefore, it is absolutely important to sterilize the vessel in advance.
Next, you’ll need high-quality unpasteurized ingredient like water kefir or kombucha to get the fermentation process started.
Since these products are already fermented, they help the blueberries to start their own fermentation. Small fruits like berries, which also naturally contain less sugar, ferment very quickly and only need 24 – 48 hours to reach this state. Once all the sweetness is gone, they are ready to be fermented.

Blueberry Lemon Energy Balls Recipe
What you need
For 14 servings
- 2 cups blueberries
- 1/2 cup fermentation starter (unpasteurized water kefir, kombucha)
- 2 cups fine shredded coconut
- 2 cups chopped raw or roasted almonds
- 1 tablespoon chia seeds
- 1 tablespoon coconut flour
- 1 pinch salt
- 1/4 cup coconut oil, melted
- 1/4 cup lemon juice
- 2 tablespoons lemon zest organic
Preparation
- The day before the preparation, the blueberries are fermented.
- Place the berries with the selected starter in a jar with an airtight lid. If necessary, fill with filtered water; the berries should be completely covered. Let the jar ferment in a warm place for at least 6 to 12 hours or longer.
Note: In winter you may need more than 24 hours, in summer maybe only six. Test the mixture to see if it is ready. It should have no – or very little flavor.

In the meantime, put the coconut flakes, almonds, chia seeds, coconut flour and salt in a food processor. Pulse for 30 seconds until everything is finely chopped.
Add the drained blueberries, melted oil, lemon juice and zest and blend for at least another 30 seconds until everything is a fine mixture.
