Fermenting fruit at home is really much easier than it sounds. With the right ingredients and tools, it takes no more than a day or two. For starters, we recommend using a clean fermentation vessel with an airtight seal to prevent mold growth. Therefore, it is absolutely important to sterilize the vessel in advance.
Next, you’ll need high-quality unpasteurized ingredient like water kefir or kombucha to get the fermentation process started.
Since these products are already fermented, they help the blueberries to start their own fermentation. Small fruits like berries, which also naturally contain less sugar, ferment very quickly and only need 24 – 48 hours to reach this state. Once all the sweetness is gone, they are ready to be fermented.
To make it complete, the fermented blueberries are mixed with other gut-friendly ingredients like shredded coconut, toasted almonds, chia seeds and lemon and rolled into delicious little Blueberry Lemon Energy Balls. You can store these in the fridge for up to a week, making them a perfect snack for when you’re feeling peckish.
